My favorite time of year is fall. Lately, it has been picturesque with the trees turning colors, warm sunny days, and cool nights. Tomorrow the high is 48 degrees! I celebrated making it through my hellish week of school by going on a walk today and these pictures don't do it justice. It was so beautiful! Another thing I love about fall is the pumpkin flavors! I swear, every brand has come out with pumpkin flavored something. My favorite is the pumpkin spiced latte (PSL) but I was in the mood for some pumpkin muffins the other day. They turned out great! These are not a sweet muffin like you would normally get at a coffee shop. If you want more sweetness add more brown sugar! Pumpkin Muffins 3 large eggs 1 can pumpkin puree (15 oz.) 3 Tablespoons chia seeds 1/2 cup ground flax seeds 1 cup all purpose flour 1/2 cup whole wheat flour 1 teaspoon vanilla 3 Tablespoons greek yogurt 1/2 cup brown sugar 2 teaspoons ground cinnamon 1/4 teaspoon nutmeg 1 teaspoon baking soda 1 Tablespoon baking powder chopped walnuts or pecans for the top Pre-heat oven to 350 degrees. Beat eggs, pumpkin, greek yogurt, brown sugar and vanilla in a large bowl until mixed well. Stir in all purpose and whole wheat flour, chia seeds, flax seeds, cinnamon, nutmeg, baking powder, and baking soda. Scoop into lined muffin tins. Top with chopped walnuts or pecans and sprinkle the top with more brown sugar! Bake for 25 minutes or until a toothpick comes out clean! Let them cool and store in a dry cool place.
