Literally SO tired of summer heat. Today is a little cooler and raining thank goodness. I am so looking forward to pumpkin spice flavored everything, t-shirts and jeans, and the leaves changing colors. The past few weeks have been "sweat while you're sitting" hot. Dew points in the 60's and heat index in the 100's. That's the thing about Minnesota - ridiculously hot in the summer and bitterly cold in the winter. But I wouldn't trade it for ANYTHING☺️ We don't have air conditioning so it can get uncomfortable. After a long day at work or school, there is nothing worse than coming home and having to make something in the kitchen that is going to heat up the whole house. That's why I love this recipe. It is refreshing, easy to make, and delicious! COWBOY CAVIAR 1/2 cup olive oil 1/3 cup white sugar 1/3 cup white vinegar 1 teaspoon chili powder 1 teaspoon salt 1 pound roma tomatoes, seeded and diced 1 (15oz.) can black eyed peas, rinsed and drained 1 (15 oz.) can black beans, rinsed and drained 1 (11oz.) can sweet corn, rinsed and drained 1 small red onion, diced 1 cup cucumber, diced 1/2 of a green bell pepper, diced 1/2 of a red bell pepper, diced 1 bunch of chopped cilantro Literally put everything into a bowl and mix together! It tastes best after 1 hour refrigerated. The first time I made this recipe I didn't put cucumber and the second time I did. Personally, I like the extra crunch and freshness, but its' up to you whether you add it or not! There are two types of people in this world...those who like cilantro and those who think it tastes like soap. If you're part of the later group, leave the darn cilantro out 😂 Another great thing is it makes A LOT! And the even better thing is the longer it sits the better it tastes. My favorite way to eat it is with Red Hot Blue corn chips but it is also good in scrambled eggs or on top of spinach. Try it out and let me know what you think!
