The other night, Justin and I were craving sundried tomatoes. What a weird craving right?! The only other thing I've ever had sundried tomatoes on (besides this pasta) is the Titan sub at Erbert's and Gerbert's, but they're soooo good! They have such a distinct taste and robust flavor. Luckily I had my mom's recipe for this delicious meal and whipped it up quick for dinner... This dish is creamy and oh so delicious. My mom's original recipe calls for chicken but we spiced it up a little with chirizo sausage. It's good either way, and if you're vegetarian just leave the meat out and it'll be just as yummy! Sundried tomato pasta1/2 cup chopped sundried tomatoes (if using marinated, drain liquid off first) 2 tablespoons olive oil 1 tablespoon minced garlic 10.5 ounce can of chicken broth 1 pint of whipping cream 2 cooked, diced chicken breasts OR 3 chirizo sausages 1/2 teaspoon salt 1/2 teaspoon pepper 1 1/2 teaspoon of dried basil 1/2 cup shredded parmesan cheese Any pasta of your choosing! First, chop, slice, and mince the tomatoes, sausage/chicken, and garlic. Saute them in oil until garlic and sausage/chicken is browned. Watch carefully and don't let the garlic burn!! Add chicken broth and let it come to a boil. Remove from heat and slowly add the whipping cream! Return to low heat and simmer for 30 minutes until thickened. Once thickened, stir in cheese and basil. The sauce will thicken even more as it cools. We put it over linguine noodles, but bowtie ones also work well. Enjoy!
