No not me and not Justin my boyfriend... I mean Tera's protein powder and Justin's almond butter! I saw this recipe on another blog, Simply Taralynn, and thought, "those look freakin' delicious!" I quick ran to the grocery store and grabbed what I already didn't have to make these bad boys... PEANUT BUTTER CUPS (adapted from Simply Taralynn) 2 packets or 2 scoops of your favorite vanilla protein powder 2 tablespoons of ground flaxseed 1 tablespoon of coconut oil 1 tablespoon of honey 1 cup of peanut butter or almond butter (or a combination of both) 4 cups of chocolate chips mini muffin tin liners I used dark chocolate chips and a combo of what I had left for peanut butter and almond butter. It ended up being mostly almond butter, but they still tasted AMAZE BALLS. My dietician told me about Tera's whey protein powder and you can find it at Whole Foods Co-op. It is a great addition to things like smoothies, overnight oats, and baked goods for an extra boost of protein! Combine everything but the chocolate chips and microwave for 30 seconds to help the peanut/almond butter mix in with the protein powder and flax. After it's all mixed together it will be the consistency of cookie dough! If your ingredients aren't mixing together, you can nuke them again. If the mixture gets too runny, pop it in the refrigerator and it will become firmer. Put that hunk of deliciousness aside and grab another bowl for your chocolate chippers! Microwave 2 cups of those in 30 second intervals, stirring in between, until melted. Spoon about 1 teaspoon of the melted chocolate into the bottom of each of your mini muffin liners and pop in the refrigerator to harden! Once the chocolate is firm, place 1 teaspoon of the peanut/almond butter in each of the mini muffin liners. Melt the remaining 2 cups of chocolate chips in the microwave as before and cover the peanut/almond butter fillings. Put back in refrigerator for 1 hour or until hard! They have the same texture as Reese's and the best part is you can make all different types of flavor combinations! Enjoy!
