Long time no see! Or rather long time no blog? Whichever, I had a very relaxing winter break and I hope you did as well! I'll do my best to catch you up in this one post on everything that's been going on. First, there is nothing better than the last day of finals. What a relief! The thing I hate about college is with all the stress and anticipation over finals, there is no enjoyment of the days leading up to the holidays. "Tucked away in our subconscious is an idyllic vision. We see ourselves on a long trip that spans the continent. We are traveling by train. Out the windows we drink in the passing scene of cars on nearby highways, of children waving at the crossings, of cattle grazing on a distant hillside, of smoke pouring from a power plant, of row upon row of corn and wheat, of flatlands and valleys, of mountains and rolling hillsides, of city skylines and village halls.
I hope everyone had a good Thanksgiving! We had five, yes FIVE, glorious days off from school so I was able to go home and spend time with family. Before I left for home, we had a friends-giving which was super fun. Justin and I brought creamed corn, stuffing, and mini pumpkin pies but there was also pigs in a blanket, stuffed shells, scalloped potatoes, coffee cake, chicken wings, cookies, and mimosas! Not your traditional Thanksgiving, but for college students I was impressed! We had lots of laughs playing cards against humanity before calling it quits and headed back. A big thanks to Anais for hosting!
As many of you know, my dad lost Ceaser in a hunting accident 2 weeks ago. My brother and my dad went to a game farm and during a retrieve, he was hit by a car and killed. Getting that news was so difficult. I can close my eyes and still feel him pushing his nose in my face to lick me. I can feel his fur in-between my fingers and hear him run to the door to greet me. He was a one-of-a-kind dog with great instinct and the most loving spirit. He was so smart and an incredible hunter. I know he died doing what he loved the most.
Well as you can probably guess, October was VERY busy for me. I haven't gotten around to blogging and I am going to try and be better about it from here on out!
School was the main culprit. I was cruising along feeling like I was, for the most part, on top of my shit. But then October hit and all of a sudden if felt like I had three exams, a problem set, two quizzes and four meetings to do or go to EVERY SINGLE DAY. Whoever said grad school would be a good idea was a freaking lunatic. My favorite time of year is fall. Lately, it has been picturesque with the trees turning colors, warm sunny days, and cool nights. Tomorrow the high is 48 degrees! I celebrated making it through my hellish week of school by going on a walk today and these pictures don't do it justice. It was so beautiful!
The power of the human body is truly amazing. As I listen to my professors talk about the body on a molecular level, it's hard to imagine that all those reactions are happening inside me. As a health professional I have been taught nearly everything about the body from how it gains energy from food, to how it uses that energy to move muscles, to how the brain sends signals to the organs, and to how the heart keeps all of it going. But sometimes I get caught up in all of that and forget how truly amazing it is that I can walk, talk, see, breathe, hear and smell.
Run, don't walk, to the kitchen and make these ASAP. They are hands down best meatballs ever!! I made them last week to have for lunches/dinners and am already thinking about making more. If you've ever had IKEA's Swedish meatballs they are similar, but oh so much better!Hot lunch or cold lunch? Main line or ala carte? These were the typical choices I would have to make in high school as I would decide what I wanted for lunch. I remember SPRINTING down the halls (yes actually full out sprinting) to avoid having to wait, what seemed like half the lunch period, standing in line for food. We would be on the lookout for our principle or any other staff just incase they were lurking around the locker bay trying to snipe the runners and hold them back. What?! Running in the halls?! A safety hazard?! Let's be real...who didn't run to lunch?!
Turkey chunks and gravy, nachos, grilled cheese and tomato soup, potato wedges, and snickers ice cream bars were all a hit in my high school. Gosh I miss those days. What was your favorite school lunch? Lately, I have been in a bit of a cooking rut. Making the same old recipes that I have made before is easy and fool proof but once and awhile it's fun to try new things and get creative! I recently heard about the Texture app and decided to try it out.
